International flights, world-famous artists and brain quesadilla’s are standard fare for restaurant consultant
Orlando, Fla. – Maneuvering through the narrow, bumpy roads of Monterrey, Mexico, Aaron Allen’s taxi pulls up to one of the largest breweries in the world. Inside the building, Allen navigates his way past the guarded gates and bubbling tanks of beer and arrives at a contemporary conference room. Soon the six top executives of FEMSA, the second largest company in Mexico (owning Dos Equis, XX, Sol, Tecate and more), file into the conference room. With the beats of remastered Mayan music vibrating from the speakers and images of Mayan temples flashing from the projector, Allen begins his presentation on how his Orlando, Florida-based marketing and public relations firm can assist the Mexican company strengthen its presence in the States with the vision of an authentic Mayan restaurant.
At the conclusion of the presentation, Allen hops aboard a plane headed to Mexico City, his third flight of the day. Upon arrival, he feasts on delicacies such as brain quesadillas as he helps one of his clients develop the next culinary phenomenon headed for the United States. This is just an example of a typical day for Allen, a restaurant consultant whose life is anything but typical.

These glass sculptures now line the lavish passageway connecting the restaurant portion of Karu to the ultralounge Y.
