R.J. Gator’s recruiting in-house talent

South Miami R.J. Gator’s selectively recruiting in-house talent

Miami, Fla. – R.J. Gator’s first Miami location is scouting out the area’s finest hospitality talent to deliver a successful opening into the market.  So far, the management has hired 75 of the necessary 160 to complete this task.

More than 1,000 people have already interviewed for positions with the Miami location, slated to open in mid-November on U.S. 1 in Cutler Ridge.  Each applicant undergoes a thorough employee pre-screening process designed to ensure quality, dedicated staff.  

R.J. Gator’s corporate team developed a 4-step process that everyone from dishwashers to hosts to servers must complete before being hired.  Initially, the individual fills out the first pre-screening questionnaire, which is basic background information.  Then, the individual is called back three different times to meet with each of the existing management and complete a series of questions.  

Based on the score of the applicant, and a collective decision by the management, they are either called back or dismissed from the application process.  These tests include questions on guest service, ethics, restaurant knowledge and leadership, and each time an applicant is called back, he/she meets with a different member of the management team.  The final step of this process is instituted in training systems to introduce employees to the R.J. Gator’s culture and philosophy.

“We’re looking for talented and dedicated people that share our passion for the restaurant industry and want to make the best of this opportunity,” said Mike Costello, co-owner and managing partner of this Miami location.  “The R.J. Gator’s recruitment system allows us to gain the insight we need to select the top-notch people in the industry.”

Costello, a former partner with Outback Steakhouse, joined the R.J. Gator’s team to develop the South Florida market.  As part of a partnership with area president, David Moliver, the two have made a commitment to open between eight and ten R.J. Gator’s in the coming years.

Since opening with one location on Indiantown Road nearly 20 years ago, R.J. Gator’s has grown to a 22-unit chain with locations throughout the southeast.  The company has experienced record growth this year, increasing its size by more than 50% with a total of 12 openings scheduled.

Each of the new locations are between 4,000 and 6,000 square feet and feature an updated décor, including open air kitchens, U-shaped indoor-outdoor bars, large covered patios, waterfalls, raw bars, full-service take-out areas and plasma screen televisions throughout.
