An Italian eatery that's drawing record crowds - from Italy

Miami Beach, FL – As any travel guide will tell you, the best places to sample a country’s cuisine are spots where the locals gather.

The same can be said of ethnic eateries in America. If people from that restaurant’s native country flock to it, then chances are it’s a place where you can sample the authentic, high-quality cuisine from that nation.

That’s certainly the case with Miami’s Fratelli La Bufala (FLB). The Italian eatery, famous around the world for its authentic wood-fired Neopolitan-style pizzas and water buffalo mozzarella and buffalo ricotta cheeses (which it imports twice a week from Italy and uses in nearly all of its dishes), has been generating large crowds of Italians at its South Beach, Miami location.

According to Adelchi Mancusi, co-owner and manager of FLB in Miami, many of those visitors have come to taste flavors that remind them of home, which he says the restaurant produces through its use fresh ingredients.

“In Italy, the flavors of the vegetables are better than here,” says Mancusi. “Italian cuisine is based on the goodness of the natural product. We use only the best quality ingredients.”

Also important, he notes, is the way the pizzas are prepared at FLB. In Italy, patrons at pizzerias can watch firsthand as their pies are made by pizzaiolis (or pizza makers). Those visiting FLB will experience the same thing, thanks to specially sectioned pizza-making zone that juts out from the restaurant’s open kitchen.

If that weren’t enough, Fratelli La Bufala brought two of its finest pizzaiolos from Italy to train its Miami Beach staff on the art of making authentic Neapolitan-style pizza. As a result, the restaurant’s current pizzaiolos are able to replicate every essence of the pies crafted in Italy.

“It’s a matter of experience,” says Mancusi of his pizzaiolis. “They are fundamentally the stars of a pizzeria. So they behave like stars. They can be whimsical.”

Based in Italy, Fratelli La Bufala has more than 20 locations around the world, including spots in Naples, Rome, Milan, Bologna and London. Its South Beach restaurant marks the company’s entrance into the American dining market.
