Nature’s Table goes global
The popular healthy-minded chain spices up its menu with a wide variety of worldly flavors.
Orlando, Fl. - Nature’s Table Cafe, known for its freshly made alternatives to fast food, plans to further expand its menu offerings by including more global flavors. The menu changes were implemented in its Melbourne, Fla. store on May 19 and will hit other locations soon.
“This was certainly a choice to move into offering our customers more exciting ingredients in our menu,” says Rich Wagner, Senior Vice-President of Nature’s Table franchise company. “We’ve introduced jasmine rice, grilled portabellos, napa cabbage, sesame thai aioli, chipotle aioli and sundried tomato aioli to name a few.”
The new menu items were selected through an extensive trial and error process that included much back and forth with vendors, says Wagner. Once final decisions were made, the company handed its ideas over to its corporate chef, Elena Manfredi, who finalized the preparations and tested the items on customers.
“We focused on making it simplistic for the staff to execute,” says Wagner, “and for the customer to be excited about and to get the margin that makes operators happy. We rolled out the new menu at our Melbourne location on May 19 and we have already seen a 16 percent increase for the same eight days we experienced last year.”
Wagner says the changes were made to avoid “menu fatigue” and to better define the “healthy” category of food, which he claims has been blurred over the years.
“I think customers are focused more on freshly prepared foods as opposed to ‘health foods’ today,” says Wagner, “and we believe in a ‘sensible’ diet as opposed to fad diets. However, we do have low-carb offerings that I feel are the best in the business.”
