With more than 10 years of professional culinary experience and extensive knowledge of Orlando’s restaurant scene, Satava’s Executive Chef Ed Bilicki leads the ongoing development and execution of Central Florida’s newest restaurant concept specializing in contemporary coastal cuisine.
Incorporating elements of cocina de autor, Bilicki uses progressive culinary techniques to create a balance of exploratory, yet approachable dishes at Satava. Bilicki’s goal is to provide Satava’s guests unique and modern culinary experiences grounded in the context of traditional flavors.
Bilicki spent most of his culinary career working under celebrity chef and restaurateur Todd English. He began his tenure under English as a prep cook at Miramar in Westport, CT and was named chef de cuisine two years later.
From Miramar, Ed moved to King Fish Hall in the historic Faneuil Hall Marketplace in downtown Boston. After a year at Kingfish, Bilicki was transferred to English’s flagship restaurant, Olives, in Charlestown Massachusetts where he served as chef de cuisine.
Most recently, Bilicki served as the executive chef of Todd English’s bluezoo at Walt Disney World Dolphin where he oversaw English’s most modern and forward thinking restaurant, earning Four Diamonds from AAA and numerous other distinctions in the process.
In addition to his professional experience, Bilicki holds a Bachelor of Science in culinary arts and a Masters of Arts and Teaching from the Johnson & Wales University.
